My Favorite Spices [43/366]

Along with raindrops on roses and whiskers on kittens, bright copper kettles and warm woolen mittens, I have a collection of spices that are among a few of my favorite things.  I use these almost daily in my cooking adventures. These are (starting upper left going clockwise) Herbs de Provence; Red Pepper Flakes; Ground Mustard Seeds; and Chili Powder.

  • The Herbs de Provence is critical for a few of my favorite French stews.  It's a mixture of savory, thyme, rosemary, basil, tarragon and lavender flowers.
  • I love red pepper flakes.  It produces my favorite kind of culinary heat.  I usually sprinkle some on some freshly made bread dipped in extra virgin olive oil.
  • Mustard seed is one of the main ingredients in my mac & cheese.
  • Chili Powder is deceitful.  Contrary to it's name, it's not overly spicy, but it adds a lot of color and aroma to a few of my chili dishes.
